Preparation
Step 1
-Roll the ready made croissant until flat.
-Drizzle honey and brown sugar on the croissant, put it on a flat pan on medium heat and press it with heavy press until crispy.
-Flip it and press on the other side until thin crispy and set aside.
Step 2
For scrambled eggs:
-Crack the eggs into a medium bowl and add the cream.
-Whisk until smooth and combined.
-Melt butter in a small nonstick skillet and cook eggs to your desired texture.
-Remove the pan from the heat when the eggs are mostly set.
-Season to taste with salt and pepper
-To assemble, Spread chipotle mayo on the flat croissant, add guacamole then scrambled eggs.
-Garnish with arugula and feta cheese.
