Preparation

Step 1

In a pot over medium heat, add the water and salt; then boil the quinoa for 10 minutes and drain it.

Step 2

Squeeze the zucchinis and carrots by hand until it is completely drained.

Step 3

In a pan over medium heat, heat the oil, and then add the onion and bell pepper. Stir well until they wilt; then add the garlic followed by the mushrooms; continue stirring for 3 minutes.

Step 4

In a deep bowl, pour the mixture, then add the mashed kidney beans, quinoa, carrots, zucchinis, and egg; stir the ingredients well, then add the breadcrumbs and spices, and form them into burger discs.

Step 5

In another pan over low heat, heat the olive oil then add the quinoa burger discs and leave them for a couple of minutes on each side until they turn golden.

Step 6

Place the quinoa burger discs in the burger buns, and add the burger sauce and the lettuce and tomato slices, and serve.
