Preparation
Step 1
Add roasted peppers into a food processor. Puree until smooth.
Step 2
Meanwhile, cook the pasta as per the instructions on the packet. Drain, reserving 1 cup of pasta cooking water.
Step 3
In the meantime, add oil to a large pan, and cook the onion and garlic over medium-high heat. Add tomato paste and stir, then add the roasted pepper puree, cream, chicken stock and some pasta water (if needed). Simmer for 10 minutes, or until the sauce thickens. Season with salt and pepper.
Step 4
Combine the pasta and the sauce. Serve sprinked with toasted breadcrumbs, crumbled feta and basil.
