Preparation
Step 1
Drain the chickpeas. Reserve 1 tbsp and tip the rest into a blender. Add 2 the 2 tbsp olive oil, tahini, truffle mayonnaise, garlic, lemon juice and 1 tsp fine salt. Blitz until completely smooth, adding a splash of water if needed
Step 2
Spoon into a serving bowl, use the back of a spoon to create a swirl, sprinkle over the reserved chickpeas and micro herbs. Drizzle with olive oil and serve with your choice of crudités
