Preparation
Step 1
Coat the sweet potatoes with olive oil and bake in a preheated oven at 200c for 45-60 mins.
Step 2
To prepare arugula salad, in a bowl mix all ingredients and toss with olive oil, lemon juice and spices and sit aside.
Step 3
When the potato is cooked, make a long cut in the middle to open the potato, season then add butter and mix it until it gets creamy without breaking the skin.
Step 4
To serve top with ranch sauce, pickled onion, arugula salad and feta.
