Preparation
Step 1
To prepare steamed rice, mix sugar and salt with vinegar until dissolved, add the vinegar mixture to the rice and mix until well combined.
Step 2
Place a sheet of plastic wrap on a clean work surface. Place a sheet of nori, shiny side down on the plastic.
Step 3
Use water to dampen your hands and prevent rice from sticking to your hands.
Step 4
Scoop some rice on the center of the sheet of nori to form a small square.
Step 5
Layer filling on top of the rice. Place another square of rice over the filling and another smaller layer of square nori to cover the rice, Fold the nori from all sides to form a square shaped sushi sandwich
Step 6
Lastly, wrap the plastic wrap tightly around the packet. Press down gently. Set aside for about 10 minutes to let the seaweed soften a bit.
Step 7
With a sharp knife, cut in half remove plastic wrap and serve with sriracha mayonnaise.
