Preparation
Step 1
For the burgers, set a frying pan with the olive oil over medium heat. Add the onion and cook for 4-6 minutes, until softened. Remove from the pan and leave to cool completely
Step 2
Put the cooled onion, mince, beaten egg, breadcrumbs, garlic granules, chill (if using) and burger sauce in a large bowl and mix really well to combine.
Step 3
Divide the mixture into four and, with wet hands, roll each piece into a ball. Press a piece of mozzarella in the center of each, then cover the cheese with the mince and form into a burger patty. Chill in the fridge for 30 minutes
Step 4
For the caramelized onions, set a heavy-based frying pan with the butter over a low heat. Add the onions and cook for 15 minutes, stirring every so often to prevent catching (don’t be tempted to turn up the heat at this point).
Step 5
Once softened, add the sugar and vinegar, increase the heat slightly and cook for a further 5- 10 minutes, until caramelized. Set aside until needed.
Step 6
Preheat the oven to 180°C and line a baking tray with baking paper
Step 7
For the maple bacon, arrange the turkey bacon on the prepared tray. Bake in the oven for 12-15 minutes.
Step 8
Remove the tray from the oven, drain off any excess fat and brush the bacon slices all over with the maple syrup. Return to the oven for 5 minutes, until crisp. Keep warm until needed.
Step 9
Set a large frying pan with the sunflower oil over a high heat. Once hot, add the burgers and cook for 2 minutes on each side. Brush all over with the burger sauce, transfer to the prepared tray and cook in the oven for 8-10 minutes, until the mince is cooked through and the mozzarella melted
Step 10
Cover with foil and rest for five minutes while you reheat the onions and maple bacon and toast the buns.

Put each burger in a bun. Bring all the other toppings and sauces to the table and let everyone build their gourmet burger. and add Goody flavored mayo or flavor station sauces
