Preparation
Step 1
In a large skillet over medium heat, heat the olive oil with one tablespoon of butter. Add the sliced onions and sugar.
Step 2
Cook, stirring occasionally, until the onions become deeply golden and caramelized, about 25–30 minutes. Set aside.
Step 3
Cook Goody pasta according to the package instructions, then drain and set aside.
Step 4
In a separate pot, melt the remaining tablespoon of butter over medium heat.
Step 5
Add the flour and cook for 1–2 minutes while stirring, until a paste-like mixture forms.
Step 6
Gradually add the milk while whisking continuously until the mixture thickens and becomes smooth.
Step 7
Add Goody mustard, cheeses, and seasonings. Stir until the cheese is completely melted and the sauce is silky.
Step 8
Add the cooking cream, cooked pasta, and caramelized onions to the sauce. Gently stir until everything is well combined.
Step 9
Pour the mixture into an oven-safe skillet or baking dish. Top with a layer of panko, then broil in the oven until the top is golden brown.
Step 10
Garnish with parsley and serve warm.
