Feta and Pesto Pinwheels

Feta and Pesto Pastries are quick and easy to make using puff pastry filled with feta cheese and basil pesto. Simply roll, slice, and bake until golden and crispy. Perfect as a light snack or a delicious appetizer.

Step 1
In a bowl, mix the feta cheese, yogurt, pesto sauce, and olive oil with a fork until it reaches a smooth consistency.
Step 2
On a lightly floured surface, cut each piece of puff pastry into a square, leaving the edges uncut.
Step 3
Place a tablespoon of the filling in the center of each square.
Step 4
Top with cherry tomato halves and season with salt and black pepper to taste.

Brush the edges of the pastry with the beaten egg mixed with instant coffee.

Fold the opposite corners of each square over the filling to form a triangle.

Seal the edges with a fork.

Place the pinwheels on a baking sheet lined with parchment paper.

Bake in a preheated oven at 180°C (350°F) for 20 minutes, or until golden brown. Serve warm.
