Preparation
Step 1
Preheat oven to 200ºC.
Spread pumpkin, feta and garlic on a baking tray, season with oregano, thyme, onion power, turmeric, salt and pepper and a drizzle of oil. Bake pumpkin for 25 minutes or until tender.
Step 2
Meanwhile, in a pot of boiling salted water, cook pasta as per packet directions.
Step 3
Once pumpkin is roasted, reserve a few cubes of pumpkin and set aside.Stir broth through remaining pumpkin and feta to make a creamy mixture.
Step 4
Stir creamy pumpkin mixture through cooked and drained pasta.
Divide pasta into bowls and garnish with reserved pumpkin cubes, a few cubes of feta and thyme leaves.
Step 5
Serve and enjoy with family and friends!
