Preparation
Step 1
Soak 16 small wooden skewers or 8 large wooden skewers in cold water while you prepare the ingredients.
Step 2
First, pat the feta dry. Slice the block in half lengthways, then cut each half into chunks. Prepare the watermelon by removing the skin and any seeds, then cutting the flesh into chunks the same size as the feta.
Step 3
Skewer the feta and watermelon on the soaked sticks, alternating the two, then sprinkle with the paprika. Set a griddle pan over a medium heat and mix the honey, pesto and dressing in a small bowl.
Step 4
Cook the skewers for 2-3 minutes on each side, until char marks appear. Once the skewers are charred, brush the feta and watermelon with the dressing. Serve hot.
