Preparation
Step 1
Preheat the oven to 200°C.
Step 2
Cut the red onions into wedges and put in the bottom of a large roasting tray along with the garlic and thyme. Sit the lamb on top and season generously.
Step 3
Whisk together 3 tbsp Goody Smoked BBQ Sauce, the Goody Hot Sauce and the olive oil then brush over the lamb. Pour over enough water to cover the onions. Cover the lamb tightly with foil.
Step 4
Place in the oven and immediately reduce the temperature to 160°C. Cook for 3½ hours, removing the foil for the final hour – when it’s ready the lamb should be tender and falling away from the bone.
Step 5
Remove from the oven and leave to rest for 20 minutes. Cook the fettuccini according to pack instructions.
Step 6
Use two forks to gently shred the meat from the bone and mix in 3 tbsp Goody Smoked BBQ Sauce.
Step 7
Melt the butter in a pan set over a medium heat. Add the flour and cook for 2 minutes. Gradually whisk in the milk and season generously.
Step 8
Stir in the cheese and remaining Goody Smoked BBQ Sauce and toss with the drained fettuccini. 9 Top the fettuccini with the pulled lamb, garnishing with the parsley just before serving.
