Preparation
Step 1
Preheat the oven to 180°c.
Step 2
Arrange the chopped peppers on a baking tray and drizzle over half the olive oil. Season with salt and black pepper and roast for 20 minutes.
Step 3
Cook the fusilli according to packet instructions. Drain and toss with the remaining olive oil.
Step 4
Tip the cooked pasta, peppers, drained salmon and rocket into a large bowl and toss to combine with the Italian salad dressing. Spoon onto a serving platter or bowl and with parsley just before serving.
