Preparation
Step 1
Season the chicken with salt, black pepper, garlic and onion powder. Set aside.
Step 2
A pot over medium heat, heat two tbsp of butter and two tbsp of olive oil in. Add the chicken and let sear for 3-4 minutes, or until the chicken is nicely browned. Flip and continue searing for another 3-4 minutes. Remove the chicken from the pot and set aside.
Step 3
Add the onions, celery and carrots to the pot. increase the temperature up to medium high and cook, stirring, for about 5 minutes, until the vegetables are slightly caramelized and softened.
Step 4
Add the garlic and cook for about 30 seconds more. Add the remaining butter and let it melt. Add the flour and mix well, ensuring no clumps remain. Cook, stirring until the flour turns brown.
