Preparation
Step 1
Set a large heatproof bowl with the condensed milk over a pan of barely simmering water. Heat for 2 hours, whisking every 15 minutes until a deep golden colour.
Step 2
Remove from the heat and stir in the date paste and salt.
Step 3
Grease a 30 x 30cm tin generously with oil. Tip the caramel mix into the tin, sprinkle with extra flaky salt if you wish, and leave to set overnight in the fridge.
Step 4
Cut into 24 squares and wrap in baking paper. Keep in the fridge until it’s time to gift.
