Flavoured butters are your secret key to unlocking more flavourful meals every night of the week. We’ve got seven ideas you can whip up in no time – each can be used immediately or rolled in to a log to store in the fridge or freezer until you need it.

Preparation

Step 1

Way one: Mediterranean butter 

To the butter, add 2 tbsp chopped Goody Black Olives, 1 tbsp chopped sun-dried tomatoes, 1 tbsp chopped parsley, 1 tbsp lemon zest, 1 crushed garlic clove and 1 tsp chilli flakes. Mix well, season with salt and pepper then roll in to a log and chill or freeze until needed. . Delicious tossed through spaghetti or sliced in to rounds to melt over steamed greens.

Step 2

Way two: mocha coffee butter 

Dissolve 24g (1 sachet) of Cofique Mocha Instant Iced Coffee in 1 tsp just-boiled water. Mix in to the butter with 1 tsp cocoa powder. Roll in to a log and chill or freeze until needed. Serve over a stack of pancakes drizzled with maple syrup.

Step 3

Way three: pesto butter 

Stir 2 tbsp Goody Green Pesto in to the butter along with the zest of 1 lemon, the flesh from 1 small bulb of garlic roasted in the oven until caramelised. and salt and pepper. Roll in to a log and chill or freeze until needed. We like to cut the butter in to rounds and place on top of white fish or salmon cooked en papillote.

Step 4

Way four: satay butter

Stir 2 tbsp Goody Chunky Peanut Butter, 1 tbsp soy sauce, 1 tsp curry powder, 1 tsp runny honey the juice of ½ lime in to the butter. Season then roll in to a log and chill or freeze until needed. One delicious way to try the butter is with eggplant: slice the vegetable into thick rounds and arrange on a roasting tray. Top with the butter then roast until soft, sticky and caramelised. Serve with rice and steamed greens.

Step 5

Way five: bloody mary butter

Stir 2 tbsp Goody Tomato Ketchup in to the butter then mix in 1 tbsp Goody Hot Sauce, 1 tbsp worcestershire sauce, 1 tsp celery salt and and 1 tsp freshly ground black pepper. Roll in to a log and chill or freeze until needed. Serve the butter as the star of a stunning dinner-party starter: melt the butter and serve warm for dunking with cooked and chilled prawns.

Step 6

Way six: date butter for crostini 

Stir 2 tbsp Goody Date Paste in to the butter then mix in a small handful finely chopped medjool dates and 1 tbsp picked and chopped rosemary leaves. Season then roll in to a log and chill until needed. To enjoy the butter, spread it on to crostini and top with a round of goat’s cheese and fresh figs. 

Step 7

Way seven: black truffle butter

Stir 2 tbsp Goody Black Truffle Mayonnaise in to the butter then mix in 2 tbsp chopped chives and 1 crushed garlic clove. Season then roll in to a log and chill or freeze until needed. The butter is delicious used to baste chicken breasts or your favourite steak.
