Seared apricot & Cinnamon Quinoa

This recipe features incredibly delicious, seared apricot balanced by the sweetness of cinnamon quinoa, all served on a bed of refreshing Greek yogurt. It's a unique and flavorful combination that provides a perfect harmony for breakfast.

Preparation
Step 1
Begin by cooking the quinoa by adding it to a pot and add the boiling water. Put the lid on and cook for 30 mins over low heat until the quinoa absorbs the water and is fully cooked.
Step 2
Slice all the apricot in half and remove the pits. In a large bowl, toss them with the vanilla, thyme leaves, and brown sugar.
Step 3
Put a cast iron pan on medium heat. Sear the apricot face down for 2 minutes or until slightly charred, flip and sear another 2 minutes.
Step 4
Remove from the heat.
Step 5
Place the apricot in a separate bowl and wipe the cast iron out.
Step 6
Mix the cinnamon, all spice and nutmeg into the quinoa with a pinch of salt. Then evenly pour the quinoa into the cast iron pan.
Step 7
Spread the apricot on top of the quinoa and sprinkle the remaining 1 tbsp of granulated sugar on top. Bake this at 200c for 20-25 minutes or until the apricot are very jammy and the quinoa has slightly crisped on top.
Step 8
To serve, add a generous scoop of vanilla yogurt to each bowl, then a scoop of the quinoa and apricot halves, drizzle some of pancake syrup on top and serve immediately.
