Preparation
Step 1
In a bowl, mix the mashed potatoes with the liquid cheese and season with salt and black pepper.
Step 2
In a pan, over medium heat, add the vegetable oil and onion and stir until translucent.
Step 3
Add the chicken and season with salt and black pepper and cook until cooked through.
Step 4
Add the mushrooms and pesto and stir for three minutes then turn off the heat.
Step 5
Form balls of mashed potatoes and place them in the cupcake pan with a hole in the center.
Step 6
Add a teaspoon of the chicken mixture and add pieces of broccoli or green onions and add cheddar and mozzarella cheese.
Step 7
Bake in a preheated oven at 200°C (400°F) until golden brown and serve hot.
