In a pan over medium heat, heat the oil, and then add the onion and bell pepper. Stir well until they wilt; then add the garlic followed by the mushrooms; continue stirring for 3 minutes.

In a deep bowl, pour the mixture, then add the mashed kidney beans, quinoa, carrots, zucchinis, and egg; stir the ingredients well, then add the breadcrumbs and spices, and form them into burger discs.

In another pan over low heat, heat the olive oil then add the quinoa burger discs and leave them for a couple of minutes on each side until they turn golden.

Place the quinoa burger discs in the burger buns, and add the burger sauce and the lettuce and tomato slices, and serve.
