Preparation
Step 1
Melt the butter in a saucepan set over medium heat. Add the kimchi and brown sugar and cook for 3-4 minutes until the kimchi liquid has thickened slightly and turned slightly sticky. Remove from the pan to cool slightly.
Step 2
Divide the kimchi among 2 slices of bread. Layer with the two kinds of cheese then tops with the remaining slices of bread. Brush both sides of the sandwiches with the mayonnaise then sprinkle with the sesame seeds.
Step 3
Set a large frying pan over medium-high heat. Melt butter until foaming then cooks the sandwiches for 3-4 minutes, pressing down with a spatula. Slice to serve.
