Preparation
Step 1
For the sauce, Add all ingredients and 4 Tbsp of water to a blender. Blend until smooth.
Step 2
Add additional water 1 Tbsp, at a time until you reach desired consistency.
Step 3
For the salad, on a serving plate spread the dressing at the bottom then on it layer of the greens, followed by chickpeas, cucumber, pickled onion and top with pomegranate, pumpkin seeds and feta cheese then serve.
