Preparation
Step 1
Cook spaghettini noodles in a large pan of boiling water for 10 minutes, adding the Bok choy, broccoli, and sugar snaps for the last 3 minutes. Drain well.
Step 2
Layer the noodles, vegetables, and chicken in 4 sealable containers. Pack into your lunchbox then when ready to serve, drizzle and shake with the dressing, adding the garnishes.
Step 3
To make the dressing, whisk together all the dressing ingredients in a bowl until the mixture is thick and creamy. Transfer to a small container.
