Preparation
Step 1
Mix the tuna, soy sauce and sriracha in a bowl. Season with salt and set aside.
Step 2
Put the cooked rice in a large bowl and mix with the vinegar and sesame oil. Season with salt.
Step 3
With wet hands, take 1/3 cup of the rice and roll into a ball. Flatten with the palm of your hands then place 1 tbsp tuna filling in the middle. Push the tuna into the rice ball then cover with the rice, shaping back into a ball.
Step 4
Using your fingers or on a surface, shape the ball into a triangle. Put the nori strip on a plate, then sit the rice triangle in the center. Wrap the edges around the side of the rice.
Step 5
Garnish with the sesame seeds and serve with the ginger, caviar and micro herbs. Serve with the teriyaki sauce for dipping and drizzling.
