Preparation
Step 1
Preheat the oven to 180°C, gas mark 4.
Step 2
Put the mince, onion, garlic, coriander, cumin, salt, breadcrumbs and parsley in a large bowl and mix really well – using your hands is best for this.
Step 3
Whisk together the egg and sieved tomatoes, then stir into the mince mixture. With damp hands roll into 24 golf ball-sized patties. Arrange on a baking tray and cook for 12-15 minutes.
Step 4
Cool completely then transfer to an airtight container or bag and place in the fridge.
Step 5
To serve, defrost overnight in the fridge, heat through in the oven until piping hot.
