Preparation
Step 1
In a wok or a deep saucepan, heat the oil over medium heat, add garlic and ginger, then stir for 1 minute. Gradually add brown sugar and stir, then add the fish sauce, curry paste, lemon juice and stir for an additional 3-5 minutes.
Step 2
Add your coconut milk and half a cup of water. Stir until well-combined and smooth.
Step 3
Add your shrimp, calamari, and fish, then leave to cook over medium-low heat for 7-8 minutes. Meanwhile, cook the pasta as per the instructions on the packet, and drain.
Step 4
Add your cooked pasta to your seafood sauce filled pan or wok and leave to simmer for 5 minutes.
Step 5
Serve garnished with chili oil, coriander, and red chili.
