Preparation
Step 1
Cook the pasta as per the instructions on the packet. Reserve 1 cup of pasta water. Add kale leaves during the last 3 minutes of boiling.
Step 2
Meanwhile, add cilantro, garlic, almonds, parmesan and oil into a blender or food processor. With tongs, carefully transfer the kale to the blender and blend until super smooth. Season with salt and pepper.
Step 3
Transfer the pasta to a pan over medium heat with the vibrant green sauce. Add a splash of pasta water, if needed.
Step 4
Serve the pasta with the burrata, drizzle a tiny bit of extra virgin olive oil, and a sprinkle of pepper and toasted almonds.
