Preparation

Step 1

In a large bowl, combine the dry ingredients: oats, chia seeds, and shredded coconut.

Step 2

Pour in the coconut milk, Greek yogurt, and pineapple juice. Stir well until everything is incorporated.

Step 3

Gently fold in the pineapple tidbits, reserving some for garnish.
 

Step 4

Divide the oat mixture evenly into mason jars or your preferred container with lids.

Step 5

Refrigerate overnight for at least 8 hours, or ideally longer, to allow the oats to soften and absorb the flavors.

Step 6

In the morning, take out your overnight oats and garnish with the reserved pineapple tidbits and toasted coconut flakes. Enjoy cold!
