Preparation
Step 1
Rub the butter into the flour until it resembles fine breadcrumbs texture. Add the egg yolk and parmesan cheese and mix until a dough forms.Add 1-2 tablespoons of cold water if necessary. You could use a food processor for making the dough.
Step 2
On a lightly floured surface, knead the dough for 30 seconds then wrap it in a cling film. Chill the dough in the fridge for 30 minutes.
Step 3
While the dough is cooling, make the filling by pouring the cream into a bowl and then adding the remaining ingredients and mixing them.
Step 4
Preheat the oven to 180 degrees Celsius.
Step 5
Remove the dough from the refrigerator and gently roll it into a large disk that is large enough to cover a 22 cm tart pan with a removable bottom.Press the dough into the corners, correct it if necessary, and make sure there are no tears or holes. Let it cool for another 20 minutes.
Step 6
Place a parchment paper in the tart pan, then fill it with dry beans to prevent it from rising, then place it in the preheated oven.
Step 7
Bake for 25 minutes, then carefully remove the parchment paper and beans, then return it to the oven for another 5 minutes until completely dry.
Step 8
Reduce the oven temperature to 160 degrees Celsius, then pour the egg mixture into the tart pan and bake for 25 minutes or until it becomes golden brown, then serve.
