Spinach and Cheese Quiche

Preparation
Step 1
Add the dough ingredients and knead them in a bowl until they are incorporated; then wrap the dough in nylon paper and refrigerate for a couple of hours to rest.
Step 2
Roll out the dough between two layers of parchment paper; then place it in a medium-sized baking sheet and firmly press the dough. Bake in the oven at 430 degrees for 8 minutes, and then take it out of the oven to cool at room temperature.
Step 3
Add the butter and oil, then add the onion and garlic in a pan over the heat; stir until the onion pieces wilt. Afterwards, add the spinach, mushrooms, chicken stock cube, salt and black pepper. After the spinach wilts, turn off the heat and set the mixture aside until it cools.
Step 4
Add the spinach mixture over the base after it cools; then sprinkle mozzarella cheese and set aside.
Step 5
Add the white sauce ingredients in the blender and mix well; pour the mixture over the spinach and bake in the oven at 375 degrees for 30 minutes.
Step 6
Halfway through the baking time, i.e. 15 minutes after the start of the specified cooking time, open the oven and top the quiche with yellow cheddar cheese; afterwards, put the baking sheet back in the oven until the quiche is cooked.
