Preparation
Step 1
Boil the chicken breasts in 2 liters of boiling water with your favorite seasonings until cooked through.Drain the chicken from the broth, reserving the broth, and shred the chicken breasts.
Step 2
In a large pot, add the olive oil and then add the onion and stir until translucent. Then add the garlic and stir for half a minute.
Step 3
Add the chopped tomatoes, tomato sauce, shredded chicken, and then the strained chicken broth and remaining ingredients and stir.
Step 4
Cook the soup over low heat for 15 minutes to concentrate the flavors.
Step 5
Serve with nachos and more sour cream.
