Preparation
Step 1
Preheat the oven to 180°c.
Step 2
Put the chicken breasts on a baking tray and rub with half the olive oil. Season with salt and pepper and transfer to the oven for 22-25 minutes, or until cooked through.
Step 3
Allow to cool, then shred the chicken into strips using two forks.
Step 4
Set a saucepan with the remaining olive oil over a medium heat. Add the onion and cook for 3-5 minutes, until turning soft and translucent. Stir through the shredded chicken and spices and remove from the heat.
Step 5
Line a baking tray with baking paper.
Step 6
Add the lasagna sheets to a large pan of boiling salted boiling water and cook for 5 minutes.
Step 7
Drain well and immediately arrange the sheets on the prepared baking sheet to prevent them from sticking together.
Spread the chicken mixture over the lasagna sheets and roll each one up tightly, securing with a cocktail stick if needed.
Step 8
Oil a ovenproof dish and add the rollups. Pour over the marinara sauce and scatter with the cheese.
Step 9
Cook in the preheated oven for 15 minutes or until the mozzarella is golden brown and bubbling.
Scatter with the parsley before serving.
