Preparation
Step 1
Set a large frying pan with 1 tbsp olive oil over a medium heat. Cook the chicken strips for 3-4 minutes per side, then remove to a plate lined with kitchen paper
Step 2
Wipe out the pan then add the rest of the olive oil. Cook the mushrooms for 3-4 minutes until golden brown. Add the garlic and cook for a further minute. Return the chicken strips, pour over the pasta sauce and stir to coat. Lightly season and bring to a gentle simmer.
Step 3
Cook the pasta according to pack instructions. Stir ½ cup pasta cooking water through the sauce. Drain the pasta and mix through the sauce
Step 4
Divide the pasta among plates and serve topped with parsley
