Preparation
Step 1
Combine the spices, BBQ sauce and olive oil in a dish. Add the steaks, season well, then marinate while you prepare the veggies.
Step 2
Heat a skillet pan over a high heat or on the barbecue. Cook the steak for 4-5 minutes, then remove from the heat and cover loosely with foil. Cook the onions and peppers in the same pan, adding more oil if needed, until charred and starting to soften. Deglaze the pan with the vinegar then season with salt and pepper.
Step 3
Wipe out the pan and toast the corn (without any oil). Transfer to a bowl and mix with the chilli, herbs, lime, olive oil and vinegar.
Step 4
Assemble the steak and vegetables on a large platter with the chimichurri corn and all the sides.
