Preheat the oven at 150 c

Prepare a baking tray by spreading parchment paper.

In the blender, whisk the egg whites with the vinegar at high speed until you reach a foamy consistency.

Add the fine sugar and continue whisking until you reach a creamy and slightly firm consistency.

Add vanilla and starch, then continue whisking to reach a firm, hard peak cream consistency.

Pour the mixture into a baking tray and form it into a disc about 6 cm high.
Step 7
Put the tray into the oven and lower the temperature to 120 c, bake for an hour.
Step 8
After an hour, turn off the oven and keep the pavlova inside for 3 hours
Step 9
After taking it out of the oven, scoop it out lightly in the middle, add the cream in the middle, decorate it with sliced almonds and figs, and serve it cold.
