Preparation
Step 1
Coat the bottom of your largest saucepan with a thin layer of oil. Set the pan over a medium-high heat.
Step 2
Once the oil is hot add the corn, shake the pan immediately, then top with the lid – leave a small gap so steam escapes. As the first kernels start to pop, close the lid. Shake the pan every now and then until all the kernels have popped. Remove the pan from the heat and tip the corn into a large mixing bowl. (Do your best to discard any kernels which didn’t pop.)
Step 3
Put the butter, peanut butter, honey and vanilla extract (if using) in a saucepan. Set over a medium heat and stir until melted. Pour over the corn and use a plastic spatula to stir to coat. Serve the corn or divide among corns.
