Step 2

Preheat the oven to 180C. Grease and line a deep-sided 23 x 33cm baking tray with baking paper.

Whisk together the flour, sugar, bicarbonate of soda, and a pinch of salt.

Step 4

Make a well in the center.Combine the milk, egg, and vanilla in a jug.

Step 5

Pour into the well then whisk until just combined. Stir in the chocolate chips.

Step 6

Brush the paper on the tray with half the butter. Pour the batter into the tray then smooth the top. Press half the berries into the batter. Brush with the remaining butter.

Step 7

Bake the pancake tray for 10 minutes or until a skewer inserted into the center comes out clean.

Step 8

While the pancake bakes put the single cream in a bowl. Whisk until you have soft peaks then fold in 2 tbsp pancake syrup. Macerate the remaining berries in a separate bowl with the remaining syrup and lemon juice.Top the pancake tray with dollops of cream, the macerated berries, and a dusting of icing sugar. Drizzle with more syrup.
