Preparation
Step 1
in a large bowl add mussels and soak in allot of salt and cold water and let it sit for 2 hours or overnight. (skip this if the mussels are not bought fresh)
Step 2
in a large pot cook the pasta to package instruction.
Step 3
meanwhile, in a large sauce pan on medium low heat add olive oil with onion and let it cook until tender, add bell pepper and garlic, let it cook for 30 seconds.
Step 4
Add mussels and grape juice, cover and let it cook for 10 mins.
Step 5
once mussels are cooked and opened (if any did not open, please discard)
Step 6
Add goody alfredo sauce and mix well, add pasta and some pasta water if needed along with salt and pepper to taste and let it cook for 5 mins.
Step 7
Add lemon juice and chopped parsley and serve.
