Preparation
Step 1
In a plastic bag marinate chicken breast and leave for 1 hour.
Step 2
In a hot pan heat oil and sear chicken breast until golden from each side and cooked all the way through and the internal temperature of the chicken is 174c. basting in butter every few seconds.
Step 3
When chicken is cooked leave aside to rest.
Step 4
Preheat oven at 180c. on a baking sheet layer the nacho and top with cheese, shred rested chicken and add it to the nacho.
Step 5
Bake the sheet in the oven for 5 minutes or until cheese is melted.
Step 6
Take the tray out of the oven and top with all the topping ingredients.
Step 7
Drizzle Goody chipotle mayonnaise and serve.
